Frozen Sourdough Pizza Bases: What 48-Hour Fermentation Means for Your Kitchen
Why restaurants, cafés and hotels in the UAE are switching to frozen sourdough pizza bases made with Italian 00 flour, and how to get a pizzeria-quality result.

Great pizza starts with dough, and great dough takes time. That is the problem for most kitchens: a proper long fermentation needs space, temperature control and a day or two of planning. Frozen sourdough pizza bases solve it.
Why long fermentation matters
During a slow 48-hour leaven, yeast and natural bacteria break down starches and proteins in the flour. The result is:
- More flavour — a mild tang and nutty, toasty crust
- Better texture — an open, airy cornicione with a crisp base
- Easier digestion — many guests find long-fermented dough lighter
- Better holding — the crust stays pleasant longer in a hot cabinet or on a buffet
Why Italian “00” flour
“00” refers to how finely the flour is milled. Italian 00 pizza flour absorbs water well and gives a soft, extensible dough that stretches thin without tearing. That’s the classic Neapolitan-style texture.
Bianca, rossa or pinsa?
- Bianca — a plain hand-stretched base. Maximum flexibility for your own sauces and toppings.
- Rossa — the same base finished with Italian tomato sauce, saving a step on the line.
- Pinsa — a Roman-style oval with a higher hydration and an especially light, airy crumb. Excellent for sharing plates, bar menus and premium casual dining.
Getting the best result
- Keep bases frozen at −18°C until service.
- Top straight from frozen or after a short thaw, depending on your oven.
- Bake hot. A deck or pizza oven gives the best char; a convection oven works well at its highest setting.
- Go easy on wet toppings so the base stays crisp.
